    When to use Saigon cinnamon instead of Ceylon cinnamon
    Saigon cinnamon packs a stronger punch than The intensity in flavor makes it a great option for heavy dishes like stews and curries. Ceylon cinnamon is much more delicate in flavor and is well-suited for simple baked goods and other dishes with few ingredients. Saigon cinnamon does contain higher amounts of coumarin, so if you are looking to reduce your intake, opt for Ceylon, which has the lowest coumarin content of all cinnamon varieties.
    Is Saigon cinnamon Cassia cinnamon?
    Yes. Saigon cinnamon is a type of Cassia cinnamon, but it is different than the Cassia cinnamon found in most grocery stores. The most common cinnamon is Chinese cinnamon. The oil concentration in Saigon is much higher, though, due to the optimal growing climate in Vietnam. The higher level of volatile oils brings forth a much more potent flavor and aroma than the Chinese variety.
