    Consumed mostly in Europe and South America, Ceylon Cinnamon a the rarest and most valuable form of cinnamon in the world today.  It is, at times, referred to as true cinnamon but do not be mistaken, this is not like any cinnamon you have ever tasted. Its flavor and aroma profile is delicate, sweet and slightly citrus.     Grown, harvested and dried on a family estate located in Sri Lanka, Ceylon cinnamon is a real treat to use.
    Sri Lanka is the birthplace of the true cinnamon and the worlds largest exporter.  In South America true cinnamon is commonly used in moles and other sauce and rubs
    Ceylon cinnamon is used in Mexican chocolate and other goods or drinks such as horchata, flan or other familiar favorites . For this reason,  Ceylon Cinnamon is commonly referred to as Mexican cinnamon and although Mexico does grow small amount of this product it is almost entirely imported from Sri Lanka.
